In the spirit of deer season, we have a few venison recipes for you. Venison is leaner than beef, therefore has less fat. I have personally found that making meatballs out of venison is quite delicious. Recipe credits go to Lori A. Klinger from Valley view, PA.

Venison Meatballs

1 pound ground venison
1/2 cup Italian-style bread crumbs
1/3 cup chopped onion
1 egg
1 tsp. parsley
1/5 tsp. pepper
1 tablespoon Worcestershire sauce

Optional
1 12-ounce jar chili sauce
1 10-ounce jar grape jelly

Mix together the venison,bread crumbs, onion, egg, parsley, pepper and Worcestershire sauce. Form into balls. Brown in shortening. Use the meatballs in your spaghetti or smother with sauce. If you choose to smother with sauce, add 12 ounces of chili sauce and 10 ounces of grape jelly to a crock pot or pan and place in your cooked meatballs. Cook until venison meatballs are warmed through.
